Rib Rub

Prep Time: 10 minutes
Yield: Makes about 3/4 cup

Ingredients:

  • 1/3 cup paprika
  • 1/4 cup sugar
  • 3 tablespoons black pepper
  • 2 tablespoons salt
  • 2 teaspoons dry mustard
  • 2 teaspoons cayenne
  • 1 teaspoon white pepper

Preparation:

  1. Mix all ingredients.
  2. Work 1/2 half mixture into meat 12-24 hours before cooking.
  3. Apply remaining rub before smoking.
  4. Makes enough for about 5 to 6 pounds of meat.

 

BBQ Sauce

Yield: Makes about 2 1/2 cups

Ingredients:

  • 2 cups ketchup
  • 1/3 cup brown sugar
  • 1/4 cup minced onion
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 3 cloves garlic crushed
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoon liquid smoke
  • 1 teaspoon dry mustard
  • 1/2 teaspoon cayenne
  • fresh ground pepper to taste

Preparation:

  1. Blend onion and water into a puree.
  2. Heat a medium sauce pan over a medium heat.
  3. Add olive oil.
  4. When oil is warm, pour in onion puree.
  5. Simmer until slightly browned.
  6. Add remaining ingredients.
  7. Mix thoroughly and simmer for about 20 minutes.
