    Hey guys, I live in Yoncalla and have a 2nd year artichoke plant that is doing well. I just don’t know when to harvest the chokes! Do you have any advice? Thanks

      The artichoke that we eat is the flower that has not opened. Now it is established you may start devouring them. You would need to cut them while they are tightly budded. The longer you wait, the more open they become and the stringyer and worse they taste.
