Chile Lime Prawn Skewers Recipe

Ingredients:
2lbs    Prawns (peeled & deveined)
½ cup    Fresh Lime Juice (limes)
¼ cup    Oil
½ bunch    Cilantro
½ – 1 each    Serrano Chile
To Taste    Salt & Pepper

Directions:
Mix all ingredients together and marinate 10 minutes. Remove shrimp from marinade and skewer. Grill over medium heat 3-4 minutes per side.
Serve by self or you can add a fresh tomato cilantro relish or pineapple salsa.

Roasted Chipotle Corn Recipe

Ingredients:
4 ears    Fresh Corn (Shucked)
½ cup    Melted Butter
1 Tbl    Chipotle Chile in Adobe Sauce
To Taste    Salt & Pepper

Directions:
Mix Chipotle, Butter and Salt & Pepper together. Evenly coat corn with butter mixture and wrap corn in foil. Grill corn over medium heat 8 minutes per side.
