EUGENE, Ore. — A new restaurant is getting ready to open its doors in downtown Eugene.
And it’s dishing up some food that’s not your average cuisine.
In about two weeks, on Broadway a restaurant called Bon Mi will open.
It offers French–Vietnamese cuisine and a popular sandwich dish called Pho Banh Mi –a hot baguette sandwich.
The owner Yoon Bigot is Korean but says she loves Vietnamese food. Her husband is French.
Crews are putting the final touches on the flooring and kitchen.
The atmosphere displays more of a modern Asian architecture.
Bigot says she would love to see downtown grow some more and couldn’t think of a better place to open up a new business.
“I always liked the downtown and the Saturday market right behind and in the summer there is a lot of music stand out there. I think it is a beautiful place here,” Bigot said.
The goal is to open August 1, and the restaurant will offer breakfast, lunch and dinner.
It is on Broadway between Pearl and Oak streets.
