Grilled Vegetable Platter
Start with your favorite vegetables sliced, wedged or cubed. Be sure to have a lot because they will disappear quickly. Vegetables that work best include: potatoes, carrots, onions, peppers, asparagus, zucchini, fennel, mushroom, beets, or artichokes.
Marinate the vegetables with ½ cup per pound of your favorite oil-based dressing, easy marinades or simple olive oil, salt and pepper. Marinate the vegetables for 20 minutes.
Balsamic Marinade Recipe:
¼ cup Balsamic Vinegar
¼ cup Olive Oil
1 tsp Chopped Garlic
½ tsp Salt
Pinch Crushed Red Pepper
Grill over medium-high heat from 3-5 minutes. Turn and grill an additional 3-5 minutes. Once all grilled vegetables are cooled, arrange on a platter and serve with garlic mayonnaise.
