Workshop to target food waste in Lane County

EUGENE, Ore. -- Almost a third of all garbage hauled to the dump is food waste, and a good percentage of that could be saved, lightening the load on the environment.

Food is the single largest category of garbage in Lane County, representing 46,000 tons or 31% of what is thrown away. Experts said 30% to 40% of that could be eaten.

Lane County and its partners are hosting a free one-day food waste workshop for workers in food service industries.

Participants will learn about menu planning, food purchasing, storage and preparation – all aimed at reducing waste.

The event is taking place at Wildcraft Cider Works from 9 a.m. to noon on Nov. 19.
